Vegetarian kale and Canellini Bean Soup.

If you have been eating too much meat lately it is time to cleanse.  Meat four to five times a week is a manly diet full of protein.  After a while I have decided to lighten the veins and clean the body with a vitamin packed soup.   Soak the beans overnight in the stock pot with cold water.  One pound canellini beans (small white navy beans), eight quarts of water, one quart of beer, one cup of olive oil, salt, pepper, caraway seeds, one Spanish onion, two pounds of washed and chopped kale.   Dice three stacks of celery, three carrots, three medium onions.  Add two eight ounce cans of v-8 and six or seven squirts of your favorite hot sauce.  The next morning pour out the old water and pour fresh water and beer into the stock pot.  Let the beans come to a boil and reduce to a medium heat approximately four hours or until beans are tender then add all the remaining ingredients and cook for an extra hour and a half. 
When everything is soft and tender pour into a soup bowl and enjoy.  Add a table spoon of wine vinegar and enjoy with one slice of crusty whole wheat bread.  I made this soup yesterday and my sons said that is  delicious and they each had a second helping. 




The beans are loaded with protein and and iron and vitamins and minerals.  The kale is also        



loaded with calcium and magnesium and phosphorus.
