Chicken Breasts With Lemon and Oregano

Chicken is not my favorite food but since I would like to loose some weight and feel healthier as I am growing older it is a food that is coming into my diet plan a bit more than usual.  I own a sandwich press and occasionally use it to grill food such as seafood, poultry, meat and even vegetables.

Grilled food is less greasy and healthier to consume for the human body.  The grill as long as you keep an eye out will leave all foods juicy and tasty.  Many people claim that food with bones has more flavor, I beg to differ.  Taste come from seasoning and marinating and gentle cooking.

Every time I makes this chicken dish, my sons tend to lick every last bit of their serving.  I am the designated chef of my household.   My best time to prepare the day's meal is usually the early morning when my attention is the best.  My sons are still in school and at least one of the three is home in the afternoon for a three o'clock meal.  On occasion I cook more than usual because my sons are at an age that they can burn calories instantly.  Psychologist say that children become more balance individuals in society when the have at least three meals a week as a family.


GRILLED CHICKEN WITH LEMON AND OREGANO
0.5 cup extra virgin olive oil
1.0 cup lemon juice
1.0 tablespoon oregano
1.0 teaspoon ground black pepper
0.5 cup soy sauce as a substitute for salt
2.0 pounds of boneless chicken (preferably breasts-white meat)

Mix the above ingredients in a bowl and let sit for about half an hour then grill until the chicken is white inside.  Chicken cannot be eaten with any blood showing.

Please enjoy this meal as my family and I do.  It can be cut into strips and served over a salad or serve with mixed vegetables of your choice.
